  1. Rub salt into beef or pork tongue and set aside for 5 minutes. Bring a pot of water to the boil. Briefly dip tongue meat into boiling water for 30 seconds, then remove and shake off excess water.
  2. Heat sesame oil in pan over medium heat, add sliced garlic and fry gently for 1 or 2 minutes. Add green onions and stir until softened. Add slices of meat (using more sesame oil if needed) and stir fry briefly. Finally add sake, salt and pepper, and concentrated chicken stock to taste. Serve hot.

Corned / Salted Beef Tongue

The Corned / Salted Beef Tongue is not what everyone would like to eat. It is for the urban carnivore who has a predilection towards it.

The Corned / Salted Beef Tongue is basically skinned, cured and cooked meat. Traditionally most cured meat was cured using saltpetre. It is the use of saltpetre that gives the cured meat it’s distinct taste.

Although the use of saltpetre has become debatable in recent times, we believe using the right quantity and procedure eliminates the risk allegedly associated with it (check notes below).

Prep. Time: 30 Mins. + 7 to 8 days curing

Cooking Time: 50 to 60 Mins.

  • Tongues (skinned) – 2 (about 1.5 kg.)
  • Limes – 6 medium
  • Garlic (crushed) – 4 cloves (optional)
  • Cloves – 16
  • Black Pepper Corns – 20
  • Cinnamon – 3 inch
  • Saltpetre – 3 tsp.
  • Salt – 4 tbsp.

Step 1: Powder the saltpetre fine using a motar and pestle.

Step 2: Wash the tongues and drain them well. Prick them all over with a fork. And then transfer them in a glass / plastic bowl.

Step 3: Add the powdered saltpetre, salt and the juice of all the limes to the bowl and massage well into the meat. Cover the bowl with cling film or an airtight lid and leave in the refrigerator. The next day turn the tongues over using a pair of tongs and cover the bowl once again and place in the refrigerator for another 5 days turning every alternate day.

Step 4: On the 7 th day, take the cured tongues out of the refrigerator and leave out for an hour. Then transfer to a pressure cooker along with its juices. Add the spices and garlic (if using). Cover the pressure cooker with its lid and cook on high till the first whistle. Then lower the heat and cook for another 45 to 50 minutes.

Step 5: Let the pressure drop before naturally before opening the lid. Then take a pointed knife and pierce the thickest part of the tongue to see if it has cooked. If it hasn’t, pressure cook for another 15 minutes.

Step 6: Let the cooked meat cool and then transfer it to a plastic container with its juices. Cover and place in the refrigerator overnight or till ready to serve.

Step 7: When ready to serve, take the tongues out of the refrigerator and immediately discard all the thick juices. Dab the tongue with absorbent kitchen towels to dry them slightly. Then cut thin slices and serve.

How to Cut Beef For Stir-fry

Another recipe using beef tongue and the Asian style dressing. This one utilises konjac noodles for a quick and easy stir fry. If you’re not a fan of konjac noodles you can use zoodles instead. Make sure to check out my other beef tongue recipe, Asian Beef Tongue on Spinach and Kale Salad.

Asian Beef Tongue with Quick Konjac Noodle Stir Fry – Serves 2

slow cooked, peeled and cooled beef tongue in thin slices (about 200g)
1 teaspoon no taste coconut oil
4 tablespoons tamari soy sauce or coconut aminos
1 tablespoon apple cider vinegar
1 teaspoon powdered sweetener (I use Natvia)
2 teaspoons Chinese chilli oil to taste, recipe here
2 shallots, sliced
1x 250g packet konjac noodles
2 eggs, beaten
2 tbsp cooking coconut oil

Mix everything for the sauce until combined, coconut oil, tamari/aminos, vinegar, sweetener, and chilli oil.

Heat 1 tbsp coconut oil in a wok and sear beef tongue. Set aside.

Make a rolled omelette in the wok by pouring in a bit of egg. Let it cook on one side but leave the top still runny. Using chopsticks, roll it up, push to the side of
the wok and pour in some more egg. Repeat. Keep going until you have used all your egg then remove omelette and chop.

Drain and rinse konjac noodles in hot water, drain again. Fry half the shallots in remaining coconut oil for about a minute then add and fry konjac noodles, about 2 minutes.
Add in the chopped omelette and toss.

Divide stir fry between two bowls, top with beef tongue and dressing. Garnish with shallots. Toss noodles in dressing before eating to add more flavour.

How to make it

  • Put the tongue into a pot with the bay leaf and cover with water.
  • Bring to a low boil and simmer for about 3 hours, skimming off any scum that may rise to the top.
  • Remove the tongue and skin it. Keep the tongue warm while making the sauce.
  • Boil the water that the tongue was cooked in, reducing it to about 1 cup.
  • Add the vinegar and the sugar, and stir until the sugar is dissolved.
  • Add the raisins, and taste the sauce, adjusting the sugar and vinegar.
  • Dissolve the cornstarch (or flour) in some water, bring the sauce to the boil, and add the thickener.
  • Slice the tongue fairly thinly, and spoon some sauce over it to serve.

Boiled beef tongue is a perfect dish on its own, that is you can serve it with a side. But it can be also used for sandwiches, or be sliced into a salad, or be used in further cooking.

Now, cooking time for beef tongue will vary greatly depending on it size and age. It will be anywhere between 2 and 4 hours. So start testing readiness at about 2 hours mark of boiling.

Broth prepared from cooking beef tongue with vegetables tastes great as well, you can use it for a soup or some other cooking, just discard roots and use fresh ones at that point if needed.

Ingredients:

  • Whole raw beef tongue (1.5-2.5lb)
  • Small onion
  • Carrot
  • Piece of parsnip or parsley root
  • Piece of celery root
  • 3 bay leaves
  • 6 black peppercorns
  • 3 allspice peppercorns
  • Salt to taste

How to prepare, step-by-step:

  2. Place beef tongue into a pot with filled with cold water and soak it in for at least 30 mins. Then take tongue out, scrub skin clean with a knife if needed to remove any dirt, fat, blood remains or so, then rinse under cold water: Boiled Beef Tongue: Step 2
  3. Bring a cooking pot with water to slow simmer and place tongue in, bring to slow simmer again and cook for about 15 mins.   7. To check tongue readiness, pierce its thickest part with a knife or a fork, if clean juices are produced the tongue is ready, otherwise cook a bit more.   8. Placing boiled tongue into cold water will help with skin removal, just slice skin side off on the back side and pull the skin off the boiled tongue (at this point skin is supposed to come off easily, if that doesn’t happen, it may mean that tongue needs more boiling to be cooked):

  1. Place the frozen tendons, soy sauce, and enough water to cover the tendons into a pressure cooker.
  2. Bring pressure cooker up to pressure, cook 1 hour..
  3. Allow pressure to subside, you can release it quickly, or let it reduce naturally..
  4. Remove tendons, it is better to refrigerate to make cutting easier, but not required. Shown is 1 3/4 pounds, I only used the small one for this dish..
  5. In a skillet, add 2 tbl. Oil on medium heat..
  6. Once oil is hot, add chopped carrot and pepper, stir frequently. I used a rather spicy jalapeno here..
  7. Once the veggies are about half cooked 4 minutes about, add garlic and onions, stir frequently.
  8. Cut tendon in about 1/2 inch lengths across.
  9. When the onions are translucent, add tendon, stir constantly.
  10. When the tendon is heated through, add more oil if it needs it, add rice stir well.
  11. Add soy sauce, pepper, cumin, stir about 2 minutes, until everything is heated through.
  12. Serve.

  • Tongue:
  • 1 (2 lb) fresh beef tongue
  • 1 small onion, sliced
  • 6 garlic cloves, smashed
  • 1 bay leaf
  • 1 whole star anise
  • 2 whole cloves
  • 1/2 tsp black peppercorns
  • 1 1/2 Tbsp salt
  • 2 Tbsp peanut oil, suet, or extra virgin olive oil
  • Sauce:
  • 1/4 cup chopped shallot
  • 2 Tbsp butter
  • 2 Tbsp all-purpose flour
  • 1/4 cup cream
  • 1 cup stock or reserved cooking liquid from tongue
  • 2 Tbsp whole-grain mustard
  • 1/2 – 2 Tbsp prepared horseradish
  • 2 Tbsp fresh dill, chopped
  • 1 Tbsp fresh parsley, chopped
  • 1/2 tsp fresh lemon juice

Step 1

Preheat oven to 300˚F. To cook the tongue, rinse it well with cold water and place in a large oven-safe pot or dutch oven. Add water to cover by a couple inches and then add the remaining spices and aromatics. The spices listed here are a guide, but feel free to mix it up. Cover the pot and bring to a boil, then place the pot in the oven for about 3 hours, until the tongue is very tender. This can all be done in a slow cooker as well, if you desire.

When tongue is tender, let it cool uncovered in it’s cooking liquid until cool enough to handle (now’s a fine time to make the sauce). If you’re in a hurry, you can take the tongue out of the liquid to speed the process. Reserve some of the cooking liquid for the sauce, or you can simply use stock, or even milk.

For the sauce, heat the cream together with reserved cooking liquid or stock in a small pan, keep covered at a very low simmer. Melt the butter in a medium saucepan over moderate heat. Add the shallots and cook gradually, stirring, until softened. Whisk in the flour and cook, whisking briskly for about 1 to 2 minutes, until blonde. Then, gradually whisk in the pre-heated liquid, whisking constantly so as to avoid lumps (preheating the liquid also helps to prevent the sauce from seizing and creating lumps). Bring to a boil whisking. Reduce heat to a simmer and continue whisking for a couple minutes until slightly thickened. Stir in the mustard, horseradish, parsley, dill, and lemon juice and season to taste with salt and pepper. Depending on how strong your horseradish is, you may need anywhere from ½ to 2 tablespoons. Add a small amount at first and then adjust to taste once all the ingredients are in. Keep covered on the stove on very low heat.

Peel off the skin (ahhhh) and trim away any remaining nastiness. Slice the tongue into ½-inch thick slices on a slight bias. Heat a skillet over medium high heat and add just enough oil to create a thin film. Add the tongue slices, being careful not to overcrowd the pan, and fry for a few minutes, until nicely browned. Turn the slices and brown the other side for a couple minutes as well.

When done, fan the tongue slices out on a plate and drizzle with sauce. Garnish with parsley and serve. Then, admit that it’s really quite tasty.
