Put the eggs in a bowl and beat them lightly with a pinch of salt, sugar, orange or vanilla water if you don't have them, then transfer the bowl to a bain-marie and beat well until it thickens, lightens in color and triples volume;
we put the bowl aside, we incorporate the flour with the starch and when it has mixed almost completely, we pour the melted and cooled butter;
we divide this dough into three bowls:
The first bowl represents Madlene1
In the second bowl, add the cocoa and almonds
In the third bowl, add the finely chopped citrus fruits and peel
We fill the forms with these compositions, keep them in the oven for 10-15 minutes, then take them out and serve them powdered with sugar.
